Cinnamon Roll

Regular pancakes with a cinnamon-sugar swirl piped into them and a cream cheese glaze drizzled on top. You pipe the cinnamon mixture onto the cooking pancake in a spiral. It looks impressive. It's not hard. The cream cheese glaze takes 2 minutes and makes these feel like dessert for breakfast.

  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • 1/3 cup brown sugar (for the swirl)
  • 1 tbsp ground cinnamon (for the swirl)
  • 2 tbsp melted butter (for the swirl)
  • 2 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 -3 tbsp milk (for the glaze)
  • 1/4 tsp vanilla extract (for the glaze)

Instructions

    Make the pancake batter: whisk 1 1/2 cups flour, 2 tbsp sugar, 2 tsp baking powder, and 1/2 tsp salt. In a separate bowl, whisk 1 1/4 cups milk, 1 egg, 3 tbsp melted butter, and 1 tsp vanilla. Combine wet into dry, stir until just mixed.

    Make the cinnamon swirl: mix 1/3 cup brown sugar, 1 tbsp cinnamon, and 2 tbsp melted butter in a small bowl until it forms a thick paste. Spoon into a zip-lock bag or piping bag. Cut a tiny corner off the bag.

    Make the glaze: beat 2 oz cream cheese, 1/2 cup powdered sugar, 2 tbsp milk, and 1/4 tsp vanilla until smooth. Add more milk if needed until it's drizzle-able.

    Heat a griddle over medium heat. Grease with butter.

    Pour about 1/4 cup batter per pancake. While the batter is still wet on top, pipe the cinnamon mixture in a spiral starting from the center outward.

    Cook until bubbles form around the cinnamon swirl and edges look set, about 2-3 minutes.

    Flip carefully. The cinnamon side will caramelize against the pan. Cook 1-2 minutes more.

    Stack and drizzle with the cream cheese glaze while warm.

Notes

things we learned along the way

  • The cinnamon paste needs to be piped while the batter is still liquid on top. If the surface has set, the swirl just sits on top instead of sinking in.
  • Flip these gently. A wide, thin spatula is your friend here.
  • The cream cheese glaze thickens as it cools. Warm it in the microwave for 10 seconds to thin it back out.
  • Make extra glaze. You'll want more than you think.
