High protein, surprisingly fluffy. The cottage cheese melts into the batter and you can't taste it as cottage cheese, just richness. 20 grams of protein per serving without powder or supplements. Good if you're trying to eat more protein without it tasting like a project.

1x- 1 cup cottage cheese (full fat)
- 3 large eggs
- 1/2 cup all-purpose flour
- 1 tbsp sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1 tbsp melted butter

Blend 1 cup cottage cheese and 3 eggs in a blender or food processor until smooth, about 30 seconds.

Add 1/2 cup flour, 1 tbsp sugar, 1/2 tsp baking powder, 1/4 tsp salt, 1/2 tsp vanilla, and 1 tbsp melted butter. Pulse a few times until just combined.

Let the batter rest 5 minutes. It'll thicken slightly.

Heat a non-stick skillet over medium-low heat. Grease lightly with butter.

Pour about 3 tablespoons of batter per pancake. These spread thin since the batter is loose.

Cook until the edges set and the surface is mostly dry, about 2-3 minutes.

Flip gently and cook another 1-2 minutes until golden.

Serve with fresh berries and a drizzle of honey or maple syrup.
Notes
things we learned along the way
- Full-fat cottage cheese. Low-fat makes these gummy.
- Blending is the key step. If you skip it, you'll taste the curds and the texture will be off.
- These are thinner than regular pancakes. More like a thick crepe. That's normal.
- Add a scoop of protein powder to the batter if you want even more protein. Vanilla flavored works best.
