Matcha Green Tea

Bright green, faintly bitter, and earthy in a way that wakes you up without coffee. Culinary-grade matcha is cheaper than ceremonial and works fine here since you're mixing it with flour and sugar anyway. The white chocolate chips are technically optional but they balance the bitterness perfectly.

  • 1 1/2 cups all-purpose flour
  • 2 tbsp culinary-grade matcha powder
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1/3 cup white chocolate chips (optional)

Instructions

    Sift 1 1/2 cups flour and 2 tbsp matcha powder together into a large bowl. Matcha clumps badly if you skip the sifting.

    Whisk in 2 tbsp sugar, 2 tsp baking powder, and 1/4 tsp salt.

    In a separate bowl, whisk 1 1/4 cups milk, 1 egg, 2 tbsp melted butter, and 1 tsp vanilla.

    Pour the wet ingredients into the dry and stir until just combined. Fold in 1/3 cup white chocolate chips if using.

    Heat a non-stick pan over medium-low heat. Grease with a thin layer of butter.

    Pour about 1/4 cup batter per pancake. Cook 2-3 minutes until the surface bubbles and the edges look dry.

    Flip and cook 1-2 minutes more. The green color darkens slightly when cooked.

    Serve with a light dusting of matcha powder, honey, or sweetened condensed milk.

Notes

things we learned along the way

  • Sift the matcha. I said it already but I'll say it again. Unsifted matcha turns into bitter green rocks in the batter.
  • Culinary grade, not ceremonial. You'll pay $8 instead of $30 and the difference disappears once it's cooked into a pancake.
  • These go well with sweetened condensed milk drizzled on top. The sweetness cuts the matcha's vegetal edge.
